Welcome to Greedy for Greens for vegetarian recipes and health and wellness tips.
Greedy for greens started after my passion for cooking took a new level when I became vegetarian. I eat a 90% plant based, 10% vegetarian diet and I believe that experimenting with new recipes is really important to maintain a healthy, varied and balanced life.
I was initially introduced to this lifestyle from my grandparents, who swear by all things natural. They were vegan for many years, latterly changing to vegetarianism, growing their own fruits and vegetables and lived a sustainable lifestyle. They really believe in the power of plants to help nurture and heal your body, whether that be from foods, herbs or oils and I am proud to say I take a lot of my inspiration from them.
More recently and over the last couple years, I have struggled with my health, battling some horrible symptoms such as facial hair, acne, weight gain and experiencing chronic fatigue and brain fog. I was told I have a hormonal imbalance, resulting in Polycystic Ovarian Syndrome (PCOS).
PCOS affects 1 in 5 women in the UK and those with PCOS are at an increased risk of chronic diseases such as Diabetes and Heart Disease and it is one of the biggest causes of infertility in women.
After numerous appointments with my GP and specialist, I was given only one option – to start long term medications. These medications would help regulate my insulin resistance, balance my hormones and may reduce my symptoms, but also came with their own host of horrible symptoms and complications and would simply just mask the ‘problem’ while I was taking them. It soon became apparent there was nothing more important to me than taking charge of my own health, getting to the root cause and treat myself in a natural and healthy way.
This meant I started doing a lot more research into my own health, women’s health and how other conditions and symptoms – whether they be chronic or acute – can be treated and supported by Nutritional Therapy, which is why after working in dentistry for over 7 years, I am now studying Nutrition at the College of Naturopathic Medicine and I am absolutely loving it!
The human body is so intricate and so complicated that any small changes to our diet, sleep pattern, stress or lifestyle will have a huge impact on how we function. Scientific, evidence based research is at the heart of everything and attending regular seminars and events to further my knowledge is really important to me. I am learning something new everyday.
