Nutty Porridge with Coconut, Honey and Chia Seeds

I don’t know about you but as a child I used to hate porridge and always wondered why my Dad would eat it for breakfast every morning!?

Turns out porridge is actually pretty great… and tasty too!!

Cooking it with a coconut or almond milk and dressing it up with berries, nuts and seeds makes it one of the most nutritious breakfast choices and a perfect way to start the day!

Ingredients:

1/3 cup of oats
2/3 cup of almond milk (you could try using coconut milk instead)

Toppings:

1 dollop of peanut butter (crunchy or smooth) ideally with no added palm oil or preservatives
1 tbsp manuka honey
Small handful of mixed nuts (I went for hazelnuts and almonds)
Small handful of coconut flakes
1 tsp sunflower seeds
1 tsp chia seeds

Method:

  1. Put the oats and almond milk into a saucepan and cook on a low heat for about 10 minutes. Stirring frequently and adding more milk or water if needed.

  2. Pour into a bowl and have fun decorating with the toppings.

  3. Enjoy! (yes, it really is that simple!)
